Sweet and Smoky Turkey Burgers with Seasoned Sweet Potato Fries

You won’t miss fast food when you can prepare a satisfying burger and fries in your own kitchen. These flavorful turkey burgers are served inside a whole wheat bun with a homemade spicy chipotle mayonnaise and piled high with lettuce, tomato, and onion. They are served with oven-crisped seasoned sweet potato wedges.


INGREDIENTS


Turkey Burgers:

1 tablespoon canola oil

1 1/2 cups peeled and diced tart green apple

1/4 cup finely chopped celery

2 tablespoons finely minced shallot

2 pounds ground turkey breast

1/4 cup finely chopped fresh parsley

2 tablespoons prepared chutney, chopped

2 teaspoons minced chipotle peppers in adobo sauce

1 teaspoon freshly grated lemon zest

2 teaspoons freshly squeezed lemon juice

1 1/2 teaspoons freshly ground black pepper

1 teaspoon salt



Toppings:

1/3 cup light mayonnaise

1 tablespoon adobo sauce (from the can of chipotle peppers)

6 whole wheat hamburger buns

6 leaves green leaf lettuce

6 slices beefsteak tomato

6 slices red onion


Sweet Potato Fries:

3 large sweet potatoes, peeled and cut into wedges

2 tablespoons canola oil

3/4 teaspoon smoked paprika

1/2 teaspoon salt


DIRECTIONS


In a large skillet heat the oil and sauté the diced apple, celery, and shallot until tender. Remove from the heat to cool.


Place the ground turkey in a large mixing bowl. Add the cooled sautéed apple mixture along with the parsley, chutney, chipotle pepper, lemon zest, lemon juice, salt, and pepper. Gently combine all the ingredients with your hands. Divide into 6 equal-sized portions and shape into patties slightly larger than the size of the hamburger buns. Place on a baking sheet and cover with plastic wrap. Refrigerate for 2 hours.


Meanwhile, prepare the sweet potato fries. Preheat oven to 450 degrees F. Toss the sweet potato wedges with the oil, smoked paprika, and salt. Spread out the wedges on a rimmed baking sheet. Bake until browned and tender, turning once, about 20 minutes total.


When ready to prepare the burgers, pre-heat an outdoor grill or indoor grill pan to medium heat. Lightly oil the grill to prevent sticking. Grill the turkey burgers for about 5 minutes on each side or until cooked through. Let the cooked patties rest for 5 minutes before assembling the burgers.


While the burgers are resting, in a small bowl combine the low-fat mayonnaise with the adobo sauce. Assemble the turkey burgers on warmed buns with lettuce, tomato, onion, and chipotle mayonnaise. Serve with warm sweet potato fries.
